ISO 22000 training: curriculum and assessment

This curriculum is for food-safety team members and purchasing, production or service colleagues who contribute to hazard control.

Audience and preparation

This curriculum is for food-safety team members and purchasing, production or service colleagues who contribute to hazard control. Identify actual food activities, products, intended consumers and learner roles before enrolment. Bring authorised, redacted process descriptions rather than confidential formulations or customer records. Basic knowledge of the food process is important; the course does not qualify an unfamiliar person to approve a real hazard analysis or replace required technical expertise.

Learning sequence and expected records

The learning sequence links communication and management-system responsibilities to prerequisite programmes, process-flow understanding, hazard analysis and control measures. Learners distinguish validation, monitoring and verification and understand why a deviation needs a defined response. Traceability, external-provider information and changes are considered for the selected activities. The expected learning result connects a relevant hazard or control task to a role, record and decision; copying a generic HACCP table without process knowledge is inadequate.

Planning exercise

A monitoring record shows a limit excursion without recording the affected batch's disposition. Link hazard control, measurement reliability, operator action and product decision. Ask the learner to distinguish an operating target from the justified safety limit and to identify what additional evidence is needed before releasing the batch.

Assessment and role limits

Assessment includes a process-to-evidence explanation, a distinction between monitoring and verification and a justified escalation decision. The classroom task does not validate the organisation's actual food-safety plan or certify its products. Agree the activity scope, prerequisite knowledge, relevant examples and authorised standard text before scheduling. QRS can deliver the agreed training and exercises within its stated training role. Organisational certification and legal food-business controls remain separate decisions by the competent parties; attending a course does not guarantee them.

A preparation task to discuss with QRS

Illustrative learning task; not an actual customer case or a promised course assessment.

Prepare these practical records

  • Food process flow exercise
  • Hazard analysis worksheet
  • Draft monitoring plan

Bring a food product description, recipe and production flow for the practical exercise.

Before agreeing the programme, compare the proposed task with the participant’s role, experience and permitted evidence. Record the criterion, what the learner demonstrated and the remaining gap separately; attendance alone does not demonstrate the work.
