Food Production

Review the actual activity through these records: Process flows, Control-point records, Hygiene and supplier evidence. Product, site and the relevant programme determine the assessment route.

Processes to define

Processes and operational evidence

Define the actual product, activity and site before selecting an assessment route.

Processes and operational evidence

Process and risk

Follow an ingredient lot through processing, cleaning and dispatch; distinguish contamination hazards from loss of traceability when reviewing the flow.

Records and implementation

Compare monitored control values with limits, operator actions and supplier acceptance; then test whether input and finished-product lots can be reconciled.

Conditional decision example

If a recorded limit deviation has no disposition evidence, investigate affected product before release; a signed checklist does not resolve the deviation.

Records to discuss

  • Process flows
  • Control-point records
  • Hygiene and supplier evidence

These are conditional preparation examples, not actual customer cases or a mandatory checklist. Product, site and the applicable programme determine which evidence is relevant.

The applicant remains responsible for implementation and accurate records. Acceptance of work depends on the actual scope, competence and impartiality conditions. A sector guide does not establish a programme licence or accreditation.

Food production: choose the right assessment scope

Food production does not point to one universal certificate. The relevant route depends on the product, processing steps, customer contract, destination market and the role of each site in the food chain. An initial scope review should separate legal food-safety duties from voluntary management-system or buyer-scheme requirements.

What should a producer prepare?

  • A process flow from incoming materials to dispatch, including outsourced steps and storage.
  • Hazard analysis, prerequisite controls, allergen management where relevant, traceability and recall arrangements.
  • Evidence that the controls are used: monitoring, deviations, corrective actions and supplier approval records.

Illustrative case: A ready-to-eat producer with one packing site and outsourced chilled storage needs to show how temperature records and product traceability remain connected across both operations. This example is hypothetical; the applicable requirements must be confirmed for the actual product and market.

ISO 22000 is one possible food-safety management-system route, but a customer's scheme or a specific regulation may require a different assessment. QRS can review the activity and explain the possible route and its own role before a quotation. Source: ISO 22000:2018 at ISO.
