ISO 22000 Practice Questions: Process Flow, Monitoring and Correction

Food safety team training should enable participants to justify hazard analysis decisions with evidence. Examples should reflect actual changes to the organisation's products and processes.

Questions for your situation

Can hazard analysis continue when the flow diagram does not match the site?

First verify the actual process and relevant steps. Omitted rework, holding stages or outsourced operations may conceal hazards. Reassess decisions based on the old diagram. Participants should be able to explain how differences between the documented process and site practice affect the control plan.

Why can substituting a target value for a critical limit cause problems?

Clarify the control's purpose, acceptance boundary, supporting basis and action on deviation. An operating target and a boundary that ensures safety are not necessarily equivalent. Training should challenge a number that lacks technical justification even when it appears on a form. Limits and methods need competent verification.

Can a product be declared safe when monitoring records contain a gap?

Assess the missing period, affected batch and any reliable alternative evidence. Filling records later with estimates does not create monitoring evidence. Determine product status and necessary controls. The training scenario should distinguish correction of records from the decision about product safety.

Does a supplier analysis report control every raw material hazard?

Examine the report's sample, batch, method and parameter coverage. Laboratory results may not adequately control every hazard. Consider supplier evaluation, specifications, acceptance and traceability together. Training should prevent a single analysis certificate from being interpreted as approval of all risks.

How should training differ between production employees and the food safety team?

Practical knowledge for an employee's task requires different depth from the team's hazard analysis and control selection competence. Combine shared awareness with role-specific exercises. Shifts, language, product variety and individual assessment affect duration. Participant numbers alone should not determine the training plan.

Are earlier training records cancelled when a scheme or product changes?

Preserve records as evidence of previous learning. Assess gaps against new tasks or requirements and record additional learning and practice separately. Renaming an old certificate does not expand its scope. Distinguish course achievement from organisational certification and product release decisions.
