Questions for your situation
Should the flow diagram include rework and holding stages?
Include actual flows where hazards can arise. Rework, intermediate storage, outsourced processes and transfers between lines may affect outcomes. Verify the diagram on site rather than drawing only an ideal process. An omitted holding stage can exclude temperature or contamination hazards from analysis.
Are CCPs and operational prerequisite programmes managed identically?
Control selection and categorisation should follow systematic assessment. Explain monitoring criteria, deviation action and the connection to product safety. Declaring every measure a CCP does not strengthen the plan automatically. The category should clarify the management needed to control the relevant hazard.
Why may environmental monitoring be needed even when finished-product results are satisfactory?
Samples do not individually represent all production. Establish suitable monitoring where product and process hazards indicate environmental contamination risks. Justify locations, frequency, methods and resulting actions. Trends or recurring findings should not be disregarded because of one satisfactory finished-product result.
How is audit scope determined when central purchasing serves every site?
Assess shared supplier decisions alongside site-specific products and processes. Do not assume an approved input is used identically everywhere. Plan site and central process assessments under programme conditions. One contract or shared manual does not automatically establish scope for all facilities.
Is a customer request sufficient justification for extending shelf life?
Establish safety and product-condition evidence for the new period. Review formulation, process, packaging and storage conditions. Determine study scope according to risk. Changing the date on a label is not validation; distribution and consumer use conditions also matter.
How is an open food safety nonconformity handled during certification transfer?
Review current status, previous reports, findings and corrections. Moving to another body does not remove the issue. Determine transfer eligibility under relevant rules and plan additional assessment where required. Complete disclosure of earlier events and product effects supports a realistic timetable.
How should hazard analysis connect catering production with outsourced chilled transport?
Map product flow and responsibility transfers through delivery. Connect hazards in cooling, loading, transport and receipt, with accessible carrier records. A product leaving the factory in acceptable condition is not assumed to remain so automatically. Define who makes decisions about affected goods when deviations occur.
